You don't hold the gas, so much as you use the I and II buttons to set a speed. Once you're cruising you can let go and continue going. That is, until you turn, and even then, interaction is optional. Going offroad only slows you down somewhat. Steering isn't necessary or helpful to complete a turn - the game just turns you and the track. If you wanted to you could simply hold down on the gas (to counteract the offroad slowdown) and watch the laps go by. Opponents are plentiful but lhave almost no hitbox, so they're eye candy also.
